Mosaic Of Life
 
Life is a mosaic of so many mixed emotions
As complex as the human mind, as vast as all the oceans.
A giant compilation of the facets of our days,
As hard to find our way around, as any giant maze.
Such feelings we must cope with, like joy and fear and hope,
Grief and love and kindness, with all, we have to cope.
Humility and happiness, laughter and the tears,
Ecstacy, euphoria, the friendship and the fears.
Life is full of many things, like empathy and truth,
Behaviours we are taught to know, even from our youth.
How to understand our friends, how to offer prayer,
How to show our kindness by showing that we care.
Learning to be humble, to think of others first,
How to feed our knowledge like an ever growing thirst.
Trying just to do what's right, we stumble on our way,
Just hoping that we get it right, for this we always pray.
Life is a mosaic from the moment we are born,
When from our Mothers loving arms, severely we are torn.
From then we struggle onwards, learning every day,
Lessons which will help us, and guide us on our way.
How to live life truthfully, and try to do whats right,
And try to have a vision with a clear and honest sight.
Sometimes, our mosaic, we find the pieces just don't fit,
Its probably the hardest thing we ever will admit...
We cant slot in our anger, depression or our pain,
We're left with mosaic pieces, which we really cant explain.
We try to piece together the fragments that we know,
But all the bits left over, seem to have no place to go.
Our lifes mosaic completed, with all these bits left back,
Lies, deceipt, corruption..lets put them in a sack.
We really do not need them, the greed, the hate, the sorrow,
So let us leave them to one side, and think again tomorrow.
Now please stand back and take a look, the mosaic which we have made,
Look at all the colours, of every hue and shade.
See how they piece together, to make us what we are?
Like a warming fire in winter, or the sailors guiding star.
Every feeling that we feel, every real emotion,
Is a tiny part of our mosaic, created with devotion.
We make ourselves just what we are, through years of real progression,
We are a project of our life..and our very own expression.
The pieces of our own mosaic, no-one can take away,
They will remain within our soul, forever and a day.

Strata

This dish can be made with crumbled bacon or shrimp, sauteed mushrooms or leeks, and just about any kind of bread, including raisin or a mixture of white and whole wheat or rye. Prepare it a night ahead. To feed a crowd, double this recipe and prepare it in a large baking dish.

Yield: Makes 8 to 10 servings

14 slices bread, crusts removed

1 cup diced cooked ham

2 cups shredded Swiss or cheddar cheese

1/3 cup finely chopped shallots

2 tablespoons chopped fresh basil or parsley

6 eggs

3 1/2 cups milk

salt and pepper, to taste

Cut the bread into cubes. Generously grease a 13x9-inch baking dish. Make a layer with half the bread cubes, arranging them so they cover the bottom of the dish. Sprinkle the ham, cheese, shallots, and basil (or parsley) over the bread. Cover with the remaining bread cubes. Beat the eggs and milk together in a large bowl, and season with salt and pepper. Slowly pour the mixture over the top bread layer, saturating it evenly.

Cover and refrigerate overnight; the bread will soak up the liquid as the mixture stands.

Preheat the oven to 325 degrees F. Uncover the strata and bake for 1 hour, or until puffed and lightly browned.
